Vegan Sweet Potato Mac and Cheese: Creamy, Dairy-Free Comfort Food

While this has Kraft-Mac color, it has none of the questionable or animal-product based ingredients. This vegan sweet potato mac and cheese is our youngest's absolute favorite meal, and therefore is on rotation for us often.

With some pre-planning, this meal comes together in 30-minutes or less. For this recipe, I'm operating from a place that you have also pre-cooked your sweet potato.
I typically will throw my sweet potatoes in the oven the night before I plan to make this so they're cool to the touch and I don't burn my hands drying to take off their skins while making the sauce.
If you forget to pre-cook the sweet potatoes it's no big deal! You can either cook them in your over (longest method), use your air-fryer if that's your thing, or pop them in the microwave (shortest method).
If you're not making this recipe with little humans in mind, it's an easy one to add in even more vegetables when you're stirring the cheese sauce in with the noodles (peas, broccoli, whatever is your thing!).
I typically like to pair this mac n cheese with a veggie or two plus a protein and fruit salad for nutritional variety. This is a very versatile and customizable base - play with it and make it your own!
